NV Revolution White
Revolution White is made on 3 different grapes; Chardonnay 50%, Scheurebe 25%, and Riesling 25%. The majority of the grape material comes from Chardonnay and Scheurebe. The Riesling share is from a solera system that started in 2013: here, every single year, the same amount that is bottled is then replenished again, thereby obtaining a wine with full character and body.
The wine is unfiltered and may have slight sediment. This is a positive thing and we would recommend gently turning the bottle upside down before drinking in order to redistribute it so that all nuances come in the glass from the start. The more times a wine is processed the more it loses its "terroir", ergo when a wine is unfiltered, the wine gets it all.
The nose is scented: green grass, green ripe apples, lime, flint, earl gray, green fruits and herbs.
The wine is dry with a medium fullness, the taste is; green gooseberries, capers, white pepper, baked bread, yogurt, and sage.
The wine should be served with; Steamed fish with green herbs, fried green pepper and a sage / white wine sauce or Chevere chaud, a goat cheese salad, preferably with tarragon and walnuts.
Served at 9-11 degrees
