Over Hegnet - A new chapter for Æblerov

Over Hegnet is a lightly sparkling, organic apple cider made from Danish apples. It’s fresh, slightly tart, with a balanced and gentle sweetness. It’s a cider made to work across more settings. Something you can have in between beers, with food, or just on its own. Straight forward on the surface, but built on the principles that have always defined Æblerov.

Where Æblerov Goes From Here

For years, Æblerov has been one of the pioneers of the Danish cider scene, exploring terroir-driven dry ciders, fruit blends, and pushing the boundaries of cider making. But at some point, it made sense to take a step back and ask a simple question: what do we actually want from a cider in Denmark?

The answer, at least for now, is accessibility.

Denmark has some of the best conditions in the world for growing apples, yet our cider culture is still almost non-existent compared to countries like France, Spain, or the UK. If that is ever going to change, cider needs to be something more approachable, not just something for a small niche.

Reducing Æblerov from a wide range of small batch releases to one core product was also part of that thinking. A way of sharpening the expression and making it easier to understand what Danish cider can be.

With Over Hegnet, the goal was to create a cider that is consistent, approachable and affordable, while still being rooted in quality ingredients and craftsmanship.

It starts with the Apples

The final product will never be better than the raw material, which is why we continue to work with our friends at Tvedemose. They produce some of the best organic apples we can source at scale in Denmark. While many might know them for their mushrooms, supplied to supermarkets across the country, their apple orchards are actually a natural extension of their circular production.They use the spent mushroom compost as a natural, nutrient-rich fertilizer for the trees, creating a sustainable loop with zero waste.

One Cider to bring you in

We spent close to a year working with different apple blends, yeasts and fermentation profiles before landing on the final product.The flavour builds on what is often described as a Nordic profile, shaped by the natural acidity of local apples. That freshness sits at the centre of Over Hegnet. A light sweetness and slight bitterness give it shape and balance

The result is a cider that is juicy, refreshing, with enough structure to hold your attention.

Over Hegnet is not meant to be the final answer. It’s a starting point.

A cider made to bring more people in and hopefully one small step towards a broader Danish cider culture.
