Where Beer Took Us in 2025

The past year unfolded across many settings, as it tends to do when beer becomes a reason to gather and move. Across seasons, parties, cities and collaborations.

Spring

The year began quietly, then gathered pace.

During CPH DOX, our beers played a small supporting role in a cultural framework shaped by film and conversation.

At BRUS, spring continued with the release of Syd for Solen IPA. A beer introduced together with our festival friends.

A Verdant tap takeover brought brewers, beers and drinkers together, trading stories and pints. Two days later, BRUS turned nine. With bells, whistles and drums. Literally.

Movement and participation

As the city warmed up, we followed its pulse.

SAYSKY x BRUS x To Øl accompanied the Copenhagen Marathon, where runners, spectators and beer occupied the same space over the course of a long, generous day.

That focus on movement carried through to CPH Open and later the Copenhagen Half. Events shaped by activity, participation and the pleasure of being among of being among others.

Summer

Our most action-filled season yet.

Distortion shifted the tempo of the city. Streets filled, movement increased, and our beers followed the flow of people.

A week later, Heartland offered a different rhythm, defined by food, music and long conversations.

Roskilde Festival marked a new chapter.
For the first time, To Øl ran its own dedicated bar at the festival, placed by the Gaia Stage. After years of participating as guests, we finally got to step onto the stage.

At the same time, Mikropolis Cocktails expanded across the festival with close to 200 cocktail taps spread across multiple bars. It reflected a broader development at Roskilde, where the bar landscape now makes room for more local producers and a wider range of flavors.

By late August, the pace was still high.

To Øl x BRUS Street Party took over Guldbergsgade on Nørrebro from 28 to 30 August,. Over three days, the street became a shared space for beer, food and music. Around 30 international breweries poured alongside To Øl and BRUS, with visiting brewers behind the taps. Skaters, DJs and live acts filled the gaps between conversations, dancing and late-night snacks.

Street Party lives somewhere between festival and neighbourhood event.

For us, it reflects a continued focus on collaboration, openness and community.

Fall

As the season shifted, attention moved towards the craft.

Collaborations with Birrificio Italiano and Anspach & Hobday centred on recipe development, shared knowledge and friendships that extend beyond the brewhouse. These projects are as much about shared passions as they are about brewing.

In late September, we crossed another first.

Our first Fresh Hop run, brewing with hops harvested only hours earlier. The process demanded coordination across borders. Hops were selected at peak maturity and transported immediately, with constant checks to prevent degradation. Timing mattered at every step, from field to brewhouse.
The result was a beer we were genuinely proud of, and an experience we will carry with us.

In late November, we visited Fuglsang Maltfabrik in Haderslev. Brick buildings, worn floors and vast volumes of grain moving through steeping, germination and kilning. Nine days from barley to finished malt, guided by temperature, moisture and time. Walking the floors makes it clear how much happens long before brewing even begins.

Winter

The year ended on a high note. 

Since opening To Øl City in 2020, our sales volume has grown significantly, and the pace of demand has made it clear that we are still moving forward. A new co-ownership and investment arrived at exactly the right moment, giving us the opportunity to expand production and improve efficiency, while continuing along the same path.

It was a satisfying way to close the year. With momentum. With room to grow. And with plenty still ahead.

Cheers to movement, to learning, and to the friendships that beer continues to create along the way. We can’t wait to see what’s next!
